How Is Coconut Sugar Made?

This Organic Coconut Sugar is harvested from Cocos nucifera palms. Sap is “tapped” from the palms’ unopened flower stems.

Depending on certain factors, one tree can yield between 1-3 litres of sap daily. And in the right conditions, supply sap for up to 20 years. This makes coconut palms grown for sugar farming one of the most sustainable crops on the planet.

The next process involves heating the nutritious, light-golden sap in open woks. Over low heat, the moisture is evaporated until the end product is achieved. Once dried, the sugar granules get pounded and packaged.

What does the coconut sugar look like?

Texture – soft, crumbly but not sticky.
Aroma – nutty, sweet, with a hint of caramel.
Colour – anything from light honey-gold to a medium brown.

Coconut Sugar Benefits And Uses

Low glycaemic index (GI) –

Coconut sugar has a naturally low GI (glycemic index) of 54. Compare this to sugar which has a GI of 64, and honey, which has a GI of 80! The raw coconut sap, from which coconut sugar is naturally derived, has an even lower GI of 35. This does not make it suitable for diabetics. But does make it the perfect alternative to refined, high-GI sugars.

Maintaining stable blood glucose levels promotes insulin sensitivity and reduces the risk of insulin resistance, which may lead to weight gain, pre-diabetes, and other metabolic disorders.

Provides electrolytes –

Coconut palm sugar, as it’s also known, contains electrolytes in the form of potassium, sodium, magnesium, chloride, calcium, zinc, copper, and iron. Electrolytes help maintain homeostasis and support nerve and muscle function.
